The steps of the almond transformation process:

1. Harvesting at the optimum point

The farmers harvest the almonds at the optimum point of maturity, ensuring a grain with all its properties intact. The use of efficient mechanical tools reduces production time and guarantees freshness.

2. Controlled natural drying

After harvesting, the almonds are subject to a drying process with forced ventilation that eliminates humidity without altering their natural properties. This avoids the risk of mould and ensures an optimal conservation.





3. Precise shelling

Once dry, at Manolet Almonds we start the transformation process: it is the turn of the shelling step, which is carried out through high-precision machinery that separates the hard shell from the edible grain.

4. Calibration and selection

Afterwards, we calibrate the almonds based on their size and shape, carefully choosing them to ensure uniformity and quality.

The process ends with a packaging with optimal hygiene conditions, with systems that guarantee total traceability, security and product freshness.
